Cooking is a big part of what I love about myself. I love to try new recipes or old favourites. It’s therapeutic, relaxing and fun to me! It is a real passion of mine, not sure exactly when it started maybe when I moved out at 17 I forced myself to learn so I didn’t have to live off of KD and cereal 😉 anyway through the years I’ve definitely had my cooking disasters and I want to say that even if a meal or a dish doesn’t turn out please don’t be discouraged. It takes practice, patients and LOADS of trial and errors. Cooking is something you should enjoy doing from beginning to end, not something to stress about ✋🏼. I’m blessed to say that 99% of the time my meals turn out delicious and aesthetically pleasing, but it’s been a long, messy road to here ! Cheers everyone 🙏🏼 and yes, I made sausage look pretty 😁
1/2 c. Organic brown & wild rice
4 Medium honey garlic sausages
4 Parsnips, peeled and chopped
1 Large Tomato
Salt & Pepper to taste
1 T. Olive Oil
1 t. Butter
•Cook rice as per packaging
•Bring a large pot of water to a boil and add beets (I don’t peel mine, just wash them well and cut them in half if they are large) cook these for about 25 minutes or until soft (similar to potatos)
•Chop tomato into small cubes, mix it with finely chopped basil (this is my fav, so easy and tasty)
•Heat olive oil over medium heat in a large frying pan, once hot add sausages. Turn every 3-4 minutes for about 10 minutes until cooked.
•Move sausages to the side of the pan, add butter then throw the parsnips in the pan. Cook for about 5-7 minutes.
•Drain and rinse beets, serve!

▪1 lb elbow macaroni ▪1 (16 oz) jar pizza sauce ▪2 cups cottage cheese ▪1/2 white onion, finely chopped ▪1/2 bell pepper (or more) finely chopped ▪1 clove garlic, minced ▪1 tsp. dried Italian seasoning ▪1 (6 oz) bag of pepperoni ▪2 cups shredded mozzarella cheese , divided
▪3/4 cups grated parmesan cheese, divided
Optional: bacon bits, bread crumbs (before baking), olives (after baking)
Preheat your oven to 35! Spray your baking dish (large-ish size) with cooking spray. Cook ya pasta how the box says ya should. In a large bowl (or we waited until the pasta was done to throw everything in that pot so less dishes yay!) combine the cooked pasta, pizza sauce, cottage cheese, onion, pepper, garlic, & Italian seasoning. Cut up half ya pepperoni into quarters and add those in with 1 cup of mozzarella and 1/2 cup of parmesan cheese. Then pour all this goodness into your baking dish! Sprinkle your remaining cheese and pepperoni on top! We also added bread crumbs on top for a little added crunch!! Bake for 20-25 minutes. When it comes out of the oven we added olives on top. And when you serve it up you can add more parmesan cheese on top! (Aka shaker cheese if you're Sarah) .

There's just something about homemade soup in the beginning of fall.
This soup is cozy, rich, and bright. The coconut brings some sweetness and the Thai chili paste a touch of heat. It's very very yummy .
I used a box of seafood stock, quickly cooked the shrimp, took them out peeled them, and put the shells back in the broth with some sliced ginger. I let that cook down to intensify the flavors, drained the broth to get out all the shells and ginger, and added some Thai chili paste, lemongrass, two cans of coconut milk, a bit of sugar, and chopped potatoes. Once the potatoes softened, I added in shiitake mushrooms, snap peas, and lime juice. The final touch is the shrimp and cilantro. Mmmm!

Down side of loving a new recipe is we throw portion control right out the window!🤣.
