Sweet Potato Pizza Crust - a delicious alternative! We’ve tried the cauliflower crust before and that doesn’t even compare! INGREDIENTS: -3 sweet potatoes -1 egg -1 c almond flour -1/2 tsp salt -1 tsp dried oregano -1 tsp dried basil -1 tsp garlic powder -1 tbsp apple cider vinegar DIRECTIONS: Preheat oven to 400°. Peel sweet potatoes and wrap in damp paper towel. Cool in microwave until soft or you can easily pierce with a fork. Add to large mixing bowl (or food processor) with almond flour, egg, salt, dried oregano, dried basil, garlic powder, and apple cider vinegar (I also added a pinch of chili powder). Mash ingredients until well combined and the mixture takes on a doughy consistency. Spread THIN on pizza pan and cook for 30 minutes. If the layer of pizza crust is not spread evenly, the edges may gradually darken from the heat, but that is ok. Next, add desired toppings, return pizza to oven and bake for an additional 10 minutes.
